With this recipe, I wanted to combine the use of curry from 3 different countries that I’ve traveled to – from India to Trinidad to Jamaica this is the perfect medicated dish!


  • 3-4 boneless skinless chicken breast cubed
  • 2cups Basmati Rice
  • 1 cup coconut milk (infused)
  • Garlic (diced)
  • Onion (diced)
  • Cilantro (chopped)
  • 2 large tomatoes (diced)
  • Ground Curry *infused
  • Cumin
  • Tumeric
  • Salt & Pepper (infused)
  • 2 Sticks of butter (infused)
  • Shredded Coocnut
  • Whole Coconut


  1. Boil water for rice with 3 tab of infused butter
  2. Dice and season chicken with all dry infused seasoning and ⅓ cup melted infused butter set aside
  3. Dice tomatoes add to chicken
  4. Dice onions and garlic and sauté in 2 tab of infused butter 
  5. When onion garlic mix translucent add chicken and tomatoes and sauté til brown
